Spread the love - The Square
A feature on Autumn Preserves for Issue 3 of The Square. This new quarterly magazine focuses on London’s Pimlico and the surrounding areas and comes from the team behind luxury development Dolphin Square. I combined first person prose with plenty of practical tips and a recipe from a local business to root it firmly in Pimlico. Get a sense of it from the excerpts below.
‘Preserving is a minor miracle. Each tempting pot in your pantry is a time capsule. No matter what season it is, open it up and beside the smell of tangy chutney you will also release wafts of nostalgia for the golden afternoons and generous bounty of autumn. It’s a way of preserving good memories, like that country walk that ended in a sticky-fingered foraging mission, making sure no produce goes to waste and continuing a delicious culinary tradition that stretches back as far as Paleolithic times.’
‘A personal favourite is elderberry jelly with lemon and a decadent glug of Cassis, my secret weapon for adding depth to game casseroles. As with most cooking, I find that booze is almost always a good idea when it comes to preserving.’
